Zucchini Noodle Pesto Bowl with Grilled Chicken
Ingredients:
2 medium zucchini, spiralized
1 cup cherry tomatoes, halved
1/4 cup fresh basil pesto (homemade or store-bought)
1 tbsp olive oil
1 clove garlic, minced
Juice of 1/2 lemon
2 grilled chicken breasts, sliced
1 tbsp grated Parmesan cheese (optional)
Salt and pepper to taste
Instructions:
Grill your chicken breasts ahead of time or while prepping the rest of the ingredients. Season simply with salt, pepper, and a little olive oil.
Heat olive oil in a skillet over medium heat. Add garlic and cook for 1 minute until fragrant. Add spiralized zucchini and sauté for 2–3 minutes until just tender (but not soggy).
Add cherry tomatoes and continue cooking for 1–2 more minutes to soften slightly.
Remove from heat and toss zucchini noodles and tomatoes with pesto and lemon juice until evenly coated.
Top with sliced grilled chicken and sprinkle with Parmesan if desired.
Serve immediately as a light, fresh lunch or dinner option.
💡 Tip: You can swap the grilled chicken for grilled shrimp or a plant-based protein to change it up.
