Turkey & Veggie Lettuce Wraps

Turkey Wraps
Ingredients:
  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 cup shredded carrots
  • 2 tbsp low-sodium soy sauce or coconut aminos
  • 1 tbsp rice vinegar
  • 1 tsp grated fresh ginger
  • Butter or romaine lettuce leaves
  • Optional: sesame seeds and chopped green onions for garnish
Instructions:
  1. Heat olive oil in a large skillet over medium heat.
  2. Add the garlic and onion. Sauté for 2–3 minutes until fragrant and soft.
  3. Add ground turkey. Cook until browned, breaking it up as it cooks.
  4. Stir in bell pepper, carrots, soy sauce, rice vinegar, and ginger. Cook for another 3–4 minutes until veggies are slightly tender.
  5. Spoon the mixture into lettuce leaves and top with sesame seeds and green onions if desired.
  6. Serve warm and enjoy!

Makes 4 servings – great for lunch, dinner, or a light meal prep option.
