Spinach & Feta Egg Muffins
Great for: meal prep, hormone support, high-protein breakfast
Ingredients
- 6 eggs
- 1 cup fresh spinach, chopped
- ¼ cup feta cheese
- ¼ cup diced red bell pepper
- Salt & pepper to taste
Instructions
- Preheat oven to 375°F and grease a muffin tin.
- Whisk eggs with salt and pepper.
- Stir in spinach, feta, and bell pepper.
Pour into muffin cups and bake 18–20 minutes.
