Mediterranean Tuna Stuffed Cucumbers
Ingredients
2 zucchinis, halved lengthwise
½ lb lean ground turkey
1 teaspoon taco seasoning
¼ cup diced tomatoes
2 tablespoons shredded cheese
Instructions
Preheat oven to 375°F.
Scoop some of the center from zucchini halves.
Cook turkey with taco seasoning.
Fill zucchini boats with turkey mixture and top with tomatoes and cheese.
Bake for 15–18 minutes until zucchini is tender.
