Ingredients:
- 1 cup dry green or brown lentils, rinsed
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 zucchini, diced
- 1 cup cubed butternut squash
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 4 cups low-sodium vegetable broth
- 1 tsp thyme
- 1 tsp smoked paprika
- Salt & pepper to taste
- 1 bay leaf
Instructions:
- Place all ingredients in the crockpot and stir to combine.
- Cover and cook on low for 7–8 hours or high for 3–4 hours, until lentils and veggies are tender.
- Remove bay leaf before serving. Garnish with fresh parsley or a squeeze of lemon juice for brightness.
