Shrimp Lettuce Wraps

Ingredients:

For the Shrimp Marinade:

1 lb raw shrimp, peeled and deveined

2 tablespoons olive oil

2 tablespoons lime juice

1 tablespoon honey (or maple syrup)

2 garlic cloves, minced

½ teaspoon ground cumin

½ teaspoon chili powder

Salt and pepper to taste

For the Wraps:

1 head of butter lettuce or romaine hearts

1 cup fresh pineapple, cubed

½ red onion, thinly sliced

1 avocado, diced

Fresh cilantro, chopped (optional)

Lime wedges for serving

Instructions:

Marinate the Shrimp:
In a bowl, whisk together olive oil, lime juice, honey, garlic, cumin, chili powder, salt, and pepper. Add shrimp and toss to coat. Cover and refrigerate for at least 20 minutes.

Prepare the Grill:
Preheat your grill to medium-high. If using wooden skewers, soak them in water for 15–20 minutes.

Grill the Shrimp & Pineapple:
Thread shrimp onto skewers. Grill shrimp for 2–3 minutes per side or until opaque and slightly charred. Grill pineapple cubes separately or on skewers for 3–4 minutes per side until caramelized.

Assemble the Wraps:
Place 2–3 shrimp and a few pineapple chunks in each lettuce leaf. Top with red onion, avocado, and a sprinkle of cilantro.

Serve:
Squeeze fresh lime juice over the top and enjoy immediately!
