Ingredients:
- 1 ½ lbs boneless, skinless chicken breasts (or thighs), cut into chunks
- 2 medium sweet potatoes, peeled and cubed
- 2 carrots, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes (no salt added)
- 3 cups low-sodium chicken broth
- 1 tsp thyme
- 1 tsp rosemary
- 1 tsp paprika
- Salt & black pepper to taste
- 2 cups baby spinach (added at the end)
Instructions:
- Place chicken, sweet potatoes, carrots, onion, garlic, tomatoes, broth, and seasonings in the crockpot. Stir to combine.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is cooked through and veggies are tender.
- About 10 minutes before serving, stir in baby spinach until wilted.
- Serve warm as a hearty, protein-packed, and nutrient-dense stew.
