Fall Harvest Chicken & Veggies
Ingredients:
● 4 boneless, skinless chicken breasts
● 2 cups Brussels sprouts, halved
● 3 carrots, peeled and chopped
● 1 sweet potato, peeled and diced
● 1 onion, chopped
● 1 cup vegetable broth
● 1 tsp thyme
● 1 tsp rosemary
● Salt and pepper to taste
Instructions:
Place chicken breasts in the crockpot. Add the Brussels sprouts, carrots, sweet potato, onion, and vegetable broth.
Sprinkle with thyme, rosemary, salt, and pepper.
Cover and cook on low for 6-7 hours or high for 3-4 hours. Serve hot.
