Butternut Squash & Black Bean Chili

Ingredients:

  • 1 butternut squash, peeled and diced
  • 2 cans black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Optional toppings: avocado, cilantro, Greek yogurt

 

Instructions:

Place squash, black beans, diced tomatoes, onion, garlic, chili powder, and cumin in the crockpot.
Stir to combine and cook on low for 6-8 hours or high for 3-4 hours.
Season with salt and pepper. Top with avocado, cilantro, and a dollop of Greek yogurt before serving.
