Quinoa & Veggie Stuffed Peppers
Ingredients:
- 4 bell peppers, tops removed and seeds scooped
- 1 cup cooked quinoa
- 1 zucchini, diced
- 1 cup mushrooms, diced
- 1 cup spinach, chopped
- 1 can diced tomatoes (14.5 oz)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ cup shredded mozzarella (optional)
Instructions:
- Preheat oven to 375°F.
- Mix quinoa, zucchini, mushrooms, spinach, tomatoes, and seasonings in a large bowl.
- Stuff peppers with mixture, place in a baking dish, and cover with foil.
- Bake 30 minutes, uncover, sprinkle cheese on top if desired, and bake 10 minutes more.
