Quinoa & Veggie Stuffed Peppers

Ingredients:

  • 4 bell peppers, tops removed and seeds scooped

  • 1 cup cooked quinoa

  • 1 zucchini, diced

  • 1 cup mushrooms, diced

  • 1 cup spinach, chopped

  • 1 can diced tomatoes (14.5 oz)

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • ½ cup shredded mozzarella (optional)

Instructions:

  1. Preheat oven to 375°F.

  2. Mix quinoa, zucchini, mushrooms, spinach, tomatoes, and seasonings in a large bowl.

  3. Stuff peppers with mixture, place in a baking dish, and cover with foil.

  4. Bake 30 minutes, uncover, sprinkle cheese on top if desired, and bake 10 minutes more.
