Crockpot Chicken & Sweet Potato Stew

Ingredients:

  • 1 ½ lbs boneless, skinless chicken breasts (or thighs), cut into chunks
  • 2 medium sweet potatoes, peeled and cubed
  • 2 carrots, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes (no salt added)
  • 3 cups low-sodium chicken broth
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 tsp paprika
  • Salt & black pepper to taste
  • 2 cups baby spinach (added at the end)

Instructions:

  1. Place chicken, sweet potatoes, carrots, onion, garlic, tomatoes, broth, and seasonings in the crockpot. Stir to combine.
  2. Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is cooked through and veggies are tender.
  3. About 10 minutes before serving, stir in baby spinach until wilted.
  4. Serve warm as a hearty, protein-packed, and nutrient-dense stew.
