Harvest Veggie & Lentil Stew

Ingredients:

  • 1 cup dry green or brown lentils, rinsed
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 zucchini, diced
  • 1 cup cubed butternut squash
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 tsp thyme
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • 1 bay leaf

Instructions:

  1. Place all ingredients in the crockpot and stir to combine.
  2. Cover and cook on low for 7–8 hours or high for 3–4 hours, until lentils and veggies are tender.
  3. Remove bay leaf before serving. Garnish with fresh parsley or a squeeze of lemon juice for brightness.
