Jalapeño Chicken Bake Recipe
Makes 6 servings
Per serving:
1 leaner
1/3 green
3 condiments
Ingredients:
- 27 oz. cooked skinless chicken breast
- ½ tsp. garlic powder
- 8 oz. light cream cheese
- 1 c. jalapeno
- 4 oz. reduced-fat cheddar
- 6 slices turkey bacon
**I omits the bacon (not a fan) so I add 30’oz chicken
Instructions:
Preheat the oven to 375˚F
Lay chicken breasts flat in a casserole dish. Season w/garlic powder then spread cream cheese over them evenly. Cut the tops of jalapenos. Remove the seeds & stems if you want it milder, or leave some if you want more spice, then cut them into strips & lay them on top of the cream cheese then sprinkle cheddar over top. Bake for 40-45 min, remove from oven 5 min before cooking is complete & sprinkle w/bacon then return for the remaining cook time. Chicken is done when cooked through to an internal temperature of 165˚F. Serve warm with some steamed veggies or a side salad!
