Spring Strawberry Spinach Salad with Lemon-Honey Vinaigrette
Ingredients:
4 cups fresh baby spinach
1 cup sliced fresh strawberries
1/4 cup crumbled feta cheese (optional)
1/4 cup chopped walnuts or sliced almonds
1/4 small red onion, thinly sliced
Dressing:
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1 teaspoon honey (or maple syrup)
1/2 teaspoon Dijon mustard
Salt and pepper to taste
Directions:
In a large bowl, combine spinach, strawberries, feta, nuts, and red onion.
In a small jar or bowl, whisk together olive oil, lemon juice, honey, mustard, salt, and pepper.
