Turkey Zucchini Enchilada Roll-Ups (Low-Carb & Protein-Packed)
Ingredients:
2 medium zucchinis
1 lb lean ground turkey
1 tablespoon olive oil
1/2 cup chopped onion
2 garlic cloves, minced
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and pepper to taste
1 cup low-sugar enchilada sauce
1/2 cup shredded Mexican blend cheese (optional)
Fresh cilantro for garnish
Instructions:
Prep the zucchini:
Using a vegetable peeler or mandoline, slice zucchinis lengthwise into thin strips. Set aside.
Cook the turkey filling:
In a skillet, heat olive oil over medium heat. Sauté onions and garlic until soft. Add ground turkey, chili powder, cumin, salt, and pepper. Cook until turkey is browned and cooked through. Remove from heat.
Assemble the roll-ups:
Lay out 2–3 zucchini strips slightly overlapping. Place 2 tablespoons of turkey mixture at one end, then roll up tightly. Repeat with remaining zucchini and filling.
Bake:
Preheat oven to 375°F. Pour half of the enchilada sauce into the bottom of a baking dish. Place roll-ups seam side down in the dish. Pour remaining sauce on top and sprinkle with cheese if using.
Bake uncovered for 20–25 minutes, until bubbly and the zucchini is tender. Garnish with fresh cilantro and serve warm.
