Turkey & Veggie Lettuce Wraps
Ingredients:
- 1 lb lean ground turkey
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 cup shredded carrots
- 2 tbsp low-sodium soy sauce or coconut aminos
- 1 tbsp rice vinegar
- 1 tsp grated fresh ginger
- Butter or romaine lettuce leaves
- Optional: sesame seeds and chopped green onions for garnish
Instructions:
- Heat olive oil in a large skillet over medium heat.
- Add the garlic and onion. Sauté for 2–3 minutes until fragrant and soft.
- Add ground turkey. Cook until browned, breaking it up as it cooks.
- Stir in bell pepper, carrots, soy sauce, rice vinegar, and ginger. Cook for another 3–4 minutes until veggies are slightly tender.
- Spoon the mixture into lettuce leaves and top with sesame seeds and green onions if desired.
- Serve warm and enjoy!
Makes 4 servings – great for lunch, dinner, or a light meal prep option.
